Turkey Tortellini Soup- hearty, healthy soup recipe

If your weeknight dinner routine feels repetitive and you’re tired of staring into the fridge trying to figure out what will actually fill everyone up, this Turkey Tortellini Soup might be your new go-to. It’s one of those meals that checks all the boxes: healthy and packed with lean protein, easy enough to make on a weeknight, yet hearty enough to feed a hungry crowd or give you lunches for days. Perfect for empty nesters who still want real food, and for families who need something nourishing on the table without extra effort.

This heart, healthy soup recipe is filled with tender turkey, pillowy tortellini, vegetables and herbs. It feels like a complete meal in a bowl. It works just as well for a quiet dinner at home as it does when everyone’s back under one roof. And if you have leftover turkey from a roast or holiday meal, this is one of the easiest ways to turn it into something that feels brand new.

You’ll love this recipe because it strikes that rare balance of being comforting without being heavy. The lean turkey keeps it lighter, the tortellini makes it filling, and the vegetables round everything out so it actually feels like a meal that loves you back. It’s simple enough for busy nights, but good enough that you’ll want to make it again when you have company. I am a measure with love kind of girl, so feel free to adjust to your taste.

Ingredients

  • 5 cups Chicken broth
  • 3/4 cup each of Carrots, Celery, Onion, finely diced
  • 1 tbsp Garlic, minced
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • 6 oz. can tomato paste
  • Cooked ground turkey breast
  • 1/2 cup heave cream, optional
  • 1 pks, Fresh cheese tortellini
  • Baby spinach, handful
  • Freshly grated Parmesan for serving

How to Make It

Start by cooking carrots, celery, onion and garlic and let them simmer until the vegetables softened. Brown turkey meat with seasonings. Combine the two and add tomato paste, broth and let everything cook together for a few minutes so the flavors build.

Once the soup base is simmering, add the tortellini and cook just until tender. Right before serving, stir in the cream and spinach so it wilts into the soup without losing its color or texture. Finish each bowl with freshly grated Parmesan and serve hot.
